Strawberry Bread

This is a wonderful summer treat! Serve with frozen yogurt on a hot summer night, the perfect ending to a summer dinner.

2 eggs
1 cup sugar
1/3 cup vegetable oil
1/3 cup applesauce
1 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon lemon zest, freshly grated
1 1/2 - 2 cups fresh strawberries, chopped in large chunks
optional- 1/4 - 1/2 up walnuts or pecans

  • Preheat oven to 350 degrees.
  • Beat eggs, sugar, oil and applesauce and combine for 1 minute.
  • In a separate bowl, mix all dry ingredients together, including lemon zest.
  • Pour liquid into dry ingredients and stir well. Add strawberries and fold into mixture.
  • Pour into a well greased loaf pan.
  • Bake for about 1 1/2 hours or until center is cooked through. Let cool in pan for 5-10 minutes before removing.

This is also great the morning after for breakfast, toasted with a little butter!

Orange~Strawberry Smoothie

I make this for my sons breakfast every morning, I change up the berries, sometimes I use blueberries, blackberries and raspberries for a different flavor.

1 cup orange juice
1 banana
5-6 strawberries
1/2 cup frozen vanilla yogurt

  • Combine all together and blend.


Spring 2011 Recipes

Spring is right around the corner! So lets make something from my first book to help it along a little!

Sesame Noodles

This recipe is from a dear friend in Madison, CT, Liz Wallack. She is a fantastic cook. This is a wonderful side dish to bring to a picnic or outdoor grill night!

4 TBL sesame oil
1/2 C teriyaki sauce
1 TLB honey
2 TLB soy sauce
2 cloves garlic, crushed
1 TLB olive oil
2 tsp ginger, minced
2 carrots, shredded
2 TLB sesame seeds
1 scallion, chopped
1 handful fresh cilantro, chopped
1/4 C cashews, crushed
1/2 red pepper, chopped
1/2 green pepper, chopped
1 Lb. thin spaghetti

  • Boil Spaghetti until cooked al dente, set aside and cool.
  • Bake cashews for 5 minutes on 350 degrees.
  • In a small bowl combine cashews with sesame seeds, set aside.
  • Mix teriyaki, honey, soy , garlic, ginger, sesame oil, peppers, carrots, scallions and cilantro. Mix completely.
  • Pour mixture over spaghetti and top with cashews and sesame seeds. Refrigerate and serve at room temperature.  Can be one day ahead.
